Ingredients
- 1 large egg
- 1/4 cup dark brown sugar
- 1 1/4 cup skim milk
- 1 teaspoon cinnamon
- 1/4 teaspoon ground cloves
- 1/2 cup chopped walnuts
- 5 slices whole wheat bread
- 2 cups sliced fresh apple with peel
- 1/2 cup raisins or currants
- 1 cup nonfat yogurt
Instructions
- Beat the egg and sugar together with a fork in a large bowl until foamy and light.
- Stir in the milk, cinnamon, and cloves.
- Tear the bread slices into bite size pieces. Stir the bread into the liquid.
- Cover and refrigerate overnight or for at least an hour.
- Preheat oven to 375F. Lightly coat an 8 x 8 x 2 inch baking pan with cooking spray. Set aside.
- Fold apples, walnuts, and raisins into pudding mixture and spoon into the pan.
- Bake for 30-40 minutes until firm.
- Serve warm and top with 2-4 Tablespoon nonfat yogurt.
