Apple Crunch Breakfast Pudding

Ingredients

  • 1 large egg
  • 1/4 cup dark brown sugar
  • 1 1/4 cup skim milk
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground cloves
  • 1/2 cup chopped walnuts
  • 5 slices whole wheat bread
  • 2 cups sliced fresh apple with peel
  • 1/2 cup raisins or currants
  • 1 cup nonfat yogurt

Instructions

  1. Beat the egg and sugar together with a fork in a large bowl until foamy and light.
  2. Stir in the milk, cinnamon, and cloves.
  3. Tear the bread slices into bite size pieces. Stir the bread into the liquid.
  4. Cover and refrigerate overnight or for at least an hour.
  5. Preheat oven to 375F. Lightly coat an 8 x 8 x 2 inch baking pan with cooking spray. Set aside.
  6. Fold apples, walnuts, and raisins into pudding mixture and spoon into the pan.
  7. Bake for 30-40 minutes until firm.
  8. Serve warm and top with 2-4 Tablespoon nonfat yogurt.

    Sounds yummy. Do you have any substitutes for the bread?

      This dish is similar to a bread pudding, so removing the bread might change the end result. Do you have any special diet restrictions (gluten free, etc.)? If so you could try using gluten-free bread. Just keep in mind that any changes you make to the recipe will change the nutritional calculations listed with the dish.
