Eggnog

This lighter take on a delicious holiday drink is best served just after mixing.

Ingredients

  • 1 1/2cups egg substitute
  • 1 cup sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp ground nutmeg
  • 2 cups evaporated milk
  • 2 cups 1% milk

Directions

1. Refrigerate liquids in advance.

2. Beat the egg substitute for 2 or 3 minutes with an electric mixer at medium speed until very frothy.

3. Gradually beat in the sugar, vanilla, and nutmeg.

4. Stir in the milk by hand.

Chill before serving. Let guests add their own rum or brandy and a sprinkle of nutmeg, if desired.
